Low Carb/Keto Strawberry Cheesecake Bites

As part of my Lent experience, I’ve decided to cut carbs - which essentially means I’ve adopted a keto diet for the time being. With this new venture, I’ve started an instagram called “TheKetoFoodJournal”. This recipe tastes like eating Strawberry Cheesecake flavored frozen yogurt <3.

Ready In: 3 Hour and 15 minutes (Optional Overnight) | Serves: 12 Bites

Each Cup: 90 Calories - 2 g Net Carbs - 1 g Protein - 9 g Fat

Ingredients:

Strawberry Cheesecake Bites Ingredients

  • 1 Cup Chopped Up Strawberries (About 8)

  • 1 Tsp Vanilla

  • 8 Oz Cream Cheese

  • 2 Tsp Monk fruit Sweetener (or other Sweetener)

  • 1/6 Cup Melted Coconut Oil (Melt in Microwave for 30 secs)


Directions

1) Start by blending the strawberries until smooth.

2) Add other ingredients and blend until desired consistency.

3) Line a cupcake tin and evenly divide the mixture into the liners. Tap the tin on the counter to help settle the mixture into the liners.

4) Freeze until solid (about 3 hours).

5) Remove the bites from the liners and your Strawberry Cheesecake Bites are ready to eat/store in the freezer!
