Feel free to go on this journey with me if you’re interested in trying it, learning more, or just finding more mindful low carb recipes and inspiration!

Recipe: Lemon Gingerbread Sandwich Cookies

Welcome back! This year’s edition of gingerbread house making went much much better than last year’s. I’ve included some pictures to #humblebrag. (It’s still super simple, but I’m proud nonetheless.) But, this post actually isn’t about the house, but rather the extra cookie dough! These are delicious and make a perfect Valentine's day treat. Happy Valentine's Day!

Note: I used too much butter (this recipe is updated has accounted for that). However, if you happen do the same, the cup form will not hold. FEAR NOT – just reform the cups using a spoon in the pan after the first 10 minutes and then keep an eye on the crusts until they are thoroughly darkened/crunchy.

Recipe: Campfire Rice Krispie Treats – featuring Girl Scout S’mores

PAM everything. I mean everything, this makes the process so much easier. PAM the pot (on the sides too, not just the bottom), PAM the spatula you plan to use, PAM the dish that the treats will cool in, PAM any utensil that may come into contact with the melted marshmallow. If you don’t have PAM, you can also use butter or oil.
