Recipe: Sugar Free & Gluten Free Peanut Butter Cookies (Keto Friendly)

Ingredients:
* 1/2 Cup Sweetener (ex. Swerve)
* 1 Tsp Baking Powder
* 3/2 Tbsp Vanilla
* 1 Tsp Water
* 1 Tsp Cinnamon
* 1 Egg
* 1 Cup Creamy Peanut Butter
Directions
1) Preheat the oven to 350 degrees Fahrenheit.
2) Mix the sweetener, baking powder, vanilla, water, cinammon and egg together in a mixer. Once well mixed, slowly add peanut butter.
3) Mix until thoroughly incorporated. The mix should look about like the following:
4) Roll into balls a bit smaller than a ping pong ball (makes about 22) and place in the oven for 10 minutes. (Keep in mind that there isn’t butter in the recipe to help with the flattening of the cookie, hence step 5)
5) After the 10 minutes, remove the dough from the oven and use a spatula to flatten the cookies (immediately, while they are hot). This helps create those pretty broken edges as well! Return to oven for 3 minutes.
6) Remove from oven and LET COOL COMPLETELY before trying to move or package. The dough is very malleable and soft at this point. The reason why the recipe lists an hour for the “ready in” time is to allot time specifically for cooling. This cookies will harden when cooled.
6) Once cooled, your cookies are ready to eat!
