Recipe: Lemon Gingerbread Sandwich Cookies

Welcome back! This year’s edition of gingerbread house making went much much better than last year’s. I’ve included some pictures to #humblebrag. (It’s still super simple, but I’m proud nonetheless.) But, this post actually isn’t about the house, but rather the extra cookie dough! Last year, I made sandwich cookies with the extra dough (really as just a way to get the massive amounts of extra gingerbread out of my apartment - but they seemed to actually go over really well!). I must admit that it is somewhat time consuming to prep all the ingredients, but the delicious and refreshing outcome with plenty of easy leftovers makes it very worth it. Disney California Adventure Food and Wine Festival 2018 - Food and Prices

For those of you out there that don't know what the Food and Wine Festival is, I'll tell you :). The tradition started out small, with only two kiosks in DCA, in 2006. It ran through 2010 until it stopped and returned in full swing in 2016. Since 2016, it's been getting bigger and better! This year, there will be 13 kiosks making up the primary food and wine sales, along with a sit down menu at the Paradise Grill Area, and a Festival Beer Garden. However, it's so much more than that. There are opportunities to take wine tasting seminars, watch celebrity chefs at work, attend food educations, schedule special dinners, attend culinary demonstrations, listen to live music, and more.

Recipe: Bite Sized Strawberry Lemonade Pies – featuring Girl Scout Lemonades

These are delicious and make a perfect Valentine's day treat. Happy Valentine's Day!

Note: I used too much butter (this recipe is updated has accounted for that). However, if you happen do the same, the cup form will not hold. FEAR NOT – just reform the cups using a spoon in the pan after the first 10 minutes and then keep an eye on the crusts until they are thoroughly darkened/crunchy.
